A spoonful of dal can hold an extraordinary amount of flavour. The lentil itself is only the beginning: texture, acidity, seasoning and the final tempering each have something to contribute.
## A kitchen full of possibilities World Vegan Day falls on 1 November. For us, it is a chance to spend time with the plant-based side of Indian cooking: vegetables given the attention they deserve, pulses that bring substance to a meal and spices that change character as they meet heat.
Our restaurants are vegetarian, and we offer vegan choices. The distinction matters. Ghee, yoghurt, paneer and cream belong to many Indian dishes, so a vegetarian label does not by itself mean a dish is vegan. Ask our team about the specific dish and any available adaptation before ordering.
## Choose a meal with variety When sharing, think about the experience across the table. A crisp starter, a comforting curry, rice or a suitable bread, and a bright chutney can each add something different. A vegan meal should feel considered from beginning to end, including the accompaniments.
If you cook at home, begin with one dish you genuinely enjoy. Learn its rhythm: when the spices go in, how the texture changes, what a little acidity does at the end. Confidence grows from making something delicious more than once.
